Today was the final day in our lab exams.
I didnt do amazing, but, I am done, and I dont fucking care.
It looks like I puked up on my plate but I pretty much plated in like, 3 min, and had to gtfo of the room, so I really didnt give a fuck.
Shit kept falling over, things were messy..
I just grabbed anything near my hands and threw it down.
So yah, fuck you GBC! NICE KNOWING YA! Just on the down side I still have to see your ugly face for another 7 weeks on monday for math..ugh.
But, it feels amazing to be done lab, and to know that im gonna be going off to do fucking free labour for 7 weeks.. uh. yeah. free. labour. lame.

So, we DID have a super stressful and intense chocolate competition, where we did use some of the chocolates from the past post.
We did a showpiece in 3 days.. mine collapsed a lot.. ( I made an ugly owl that did not come out AT ALL btw... ).
Last day went like this.. hey everything breaks.. falls apart, I stick anything I can together, and bam, almost fail.
Upon having to leave for marking, me and Jess book it to Gabby's across the street and drink our hatred away while we await what I think was 2 hours of them marking us...
Go back, see our bad marks, could care less. the drinks softened the blow for sure.
I personally, took my show piece and threw it against a wall. Why would I want that ugly piece of shit looking at me anymore.. ?Oh right, I dont.

As well as making one of the most ridik things.. and insanely lame to make, 'canals'.
Hey, take two spoons and pass this shit between them, and get angrier and angrier as each time passes that you do it and 90% of the time you fuck it up...
even the teacher doesn't do this stupid shit, he has a 'canal scoop'... cheater.

So got some uhm, mousse canals going on in a tuille basket there, and yeah.
Poached pear action on the side ... Oh under that basket some raspberry coullis...
Annnd then on the side over there got some.. I think.. I can't quite remember...ok, w/e doesn't matter, some white sauce, lol (how pro of me?..gimme a break too many sauces at once...) with passion fruit in it. And a lamo/orange puff pastry straw. Whew. Oh, cant forget... a slice of orange and stawburrz.

This week, we made mousse cakes.
My side of the class made champagne mousse.
The other side made cassis but we switch and get one each and decorate one each.
We did some prep day one and then some more on day two as well as put them together.
On day three we finished them up.
I don't have many pics but here are some of day one and two.

It wasn't actual champagne.. Not gonna lie.. it was sparkling wine.

The cake had a lining of black current puree in it.. mmm damn yeah it was guuud.

Top that shit off, make it nice and smooth, add some mirroir glaze (which I suck again, and didn't get a pic of... hey now, class gets busy... ) and your done for the day! w00t.

Annnnnd the left over mousse which was nasty as hell by itself. Barf.

So, considering I didn't have my camera for class one and two, I am just going to sum this entry up into one big mush.
We did various jellies, otherwise known as 'preserves'. ;)
My group did an apply thyme jelly and this bizzare "golden gossip relish'.
This relish was just a big no in my eyes. A mix of many things that should have not been meeting and greeting together in a pan. From what I can recall (as this class was back in September)...
Things I loathe such as onions and peppers..mmm... dates( wth?) uhm.. gee what other weird shit, oh, diced apples, yeah.. lots of gossipers in this relish. Anyways, so we did that, but I didn't get a pic of that tooooo bad right?
I did however grab some raspberry jelly which was pretty good, and I got a picture of the jalepeno apricot jam I ate.

We also made pate de fruits
And blogger is also doing this annoying shit where it decides it wants to underline and not stop. Great.
Which is like a jellied candy of some sort. and insanely sweet.

1 c. water
1/3 c. vegetable oil

And for the icing, I just did a regular butter cream, added mint extract and green food colouring.
Icing:
6 tablespoons butter, softened
3 tablespoons milk or soymilk
1 teaspoon vanilla
3 cups confectioners’ sugar
food coloring (optional)

Today, we continued work on the cakes from yesterday.

I forgot I hadn't taken pics and by then the things were covered..

Charlotte Russe which we will finish tomorrow. (I hear it will look like a brain! )
We lined the bowl up with the cut up Charlotte Russe, and then put whipped cream and mandarins in it, then topped the top off with more cut up slices of the Charlotte.
We're gonna turn it upside down tomorrow I think, so its gonna look like a weird dome thing.

Sandwiched up the Sacher cakes, with some apricot jam in between, as well as on top.
Then, we cut em up!

Then did a crumb coat of ganache glazzzzeeee.

I think these were Sable as well, with Macaroon heart outlining, with raspberry jam inside.

Today, was another prep day.
We are making Opera Cake, and Petit Four Sec, which is not quite the same as the Petit Four Glace, but similar concept.
An Opera Cake is a I think a 7 layer cake, consisting of an Almond sponge, chocolate coating, rum simple syrup, Ganache, Coffee Butter Cream, and Glaze.

It was a rush-rush day due to the fact that again, we got in 30 minutes late.... Thanks to the class in front of us. I don't quite blame them because I had that teacher last semester and my class always ran late as well.

Semester 2, week 6, class 20

Today, we made petit fours.
They were pretty time consuming, these are what made us late the past two days.
So instead of making 48, we made only 20-24, to save time, and so other classes behind us could continue on with their day.

We started off with the slab cake
Which we cut up into strips.
Slab cake with lemon filling, covered with a thin layer of butter cream and marzipan.

Then, we took those strips, and cut them into various shapes.
Various shapes, diamonds, squares, triangles, rectangles.

Theeeeennn, we covered these things in fondant.
My group chose, orange, pink, green, and yellow.
But there wasn't enough food colouring in this shit, so it didn't turn out quite..bright.
Anyways...
This was pretty annoying.
Trying to get it even along the sides... which it wasn't quite yet here.

Yah. I'm a pretty big fucking slob.

So, colour them bad boys up with the fondant, and then we get again, shitty piping gel.
This time, chocolate... This is when it got really fun!!! (not)

It piped on nice, and then 2 minutes later, splooged out, like you can see in this picture.

Semester 2, week 6, class 19

Uhm, what a shitty class.
We, for the 2nd day in a row, got in over 30 minutes late due to the class ahead.
We also ran 45 minutes late..getting out..
Which sucks cuz I was actually the first one done for once.

It was a really stressful class, and I didn't get ANY good pics of the pulled strudel we made.
Which was hard to make.

1) make your mix
2) take the dough, plop it on top of a clean table cloth
3) roll it out a bit
4) stretch till it is as big ...as the fucking table.
5) butter it up
6) add some bread crumbs
7) sprinkle raisins and walnuts all over
8) put apples tossed in cinnamon sugar on one edge..
9) roll it once by hand
10) roll it ..over..and over..and over again, with the table cloth.

The end product is this weird, lumpy roll the size of the table, filled with stuff.

Today we made Boston Cream Pies.
They're not really pies... but apparently called that cuz they're made in a pie tin,
and in all honesty.. I've never seen one before today.
And I was wicked sick, so it was awesome standing all morning making these.
I'm surprised they came out decent, in consideration to how out of it I was.

The pie cut up, filled with pastry cream.

the 2 in the front have better whipped cream.
Someone in class made the cream for the ones in the back annnd it fucking sucked.

I ated one. All the cream made me feel even more sick, but it was pretty good.
The fondant was a bit much though.

I took some pics of the layered 'valentines' day cake.

Sponge cake, layered with, starting at the bottom:
Raspberry jam, raspberry flavoured German butter cream (the pink layers) and on top, the very disgusting Italian buttercream. I don't like it.
Maybe cuz it is all just shortening/butter... but more shortening than anything.

This is the heart shaped one, masked.
We also did a square one.

So I'm awesome and I felt like shit in class.

I had my camerarara in my pocket, yet completely forgot to take pics.

It was just prep. Some really gross icing, and layered sponge cake for 'valentines day' cake.

Also, i hate nutrition class. Project sucks, and is pointless.

Was too tired and my comp was unplugged, so I'm uploading shit now.

We finally got to decorate the fucking mousse cakes.

The mini mousse cakes.
Mango mousse with mango puree glaze.
blueberry, mango, and chocolate work (forget the actual term for it)
These had some of the vanilla sponge that was made the other day at the bottom.
(Not the marbled, stripped stuff, that stuffs different)

The big cheese that stands alone.

Same stuff as the smaller ones, just bigger.

The chocolate mousse, with chocolate glaze.
Strawberry and blueberry on top, and chocolate.
There's all these little dents from me trying to put the chocolate fan on.
Then I said fuck it cuz it looked stupid and took it off.
This one has the chocolate sponge in it that was made the other day.
It also has that japonaise stuff at the bottom.

We also made some smaller chocolate ones.
Instead of having a couple layers of cake in them, these had a base that was a chocolate/hazelnut rice crispie base, and it was fucking good.

Not much today.

Just more fucking prep.

There are two variations of the fruit mousse being done.
Raspberry and mango.
My side of the class did mango.

Just cause I liked the way the eggs looked.

This is the Mango mousse.
My big guns whipped most of it.

This is what the mousse goes into.
It is a vanilla sponge base, lined with a marbled vanilla and chocolate sponge.

Today was prep. Tomorrow..more prep.

Prep, prep, prep, prep, prep....
All for mousse cakes.

We made I think we made a one-step vanilla sponge, and I think a two-step chocolate sponge.
I was so tired I honestly don't remember.
And with my doc calling me like, 3 times, doesn't help either.

WARNING: Longggg ass post...

Lotta stuff prepped today for the St. Honore Cake.

Made some hand whipped cream, as well as vanilla and chocolate pastry cream to pipe into the cakes.

Only got one picture of the whipped cream, pastry cream pretty much looks the same anyways.

Then , we made the bases for the cake, which consisted of a pie dough base...

And then piped choux paste onto them, looks appetizing eh?

Then....
TAH DAH!
They're cooked, and look less gross...
So , cooked, and piped that bitch with some vanilla and chocolate pastry cream, which is fucking good if you get some thats made good. mmm mmm mm...

So then , we has also made come cream puffs, and piped some more good shit into them.
These blobs of dough (cream filled..oooh baby) were dipped in a sugar mix, boiled to create caramel. Fucking shit burned my finger, then cut me on my wrist. wtf.
See them sharp fucking edges.. thats some dangerous shit right thurr.

We did some pulled sugar work to create this weird ass thing that looks like fucking hair on top, but its neat regardless. Poor feller alone in the box...Bad pic too.

Pie dough base, with a ring of choux paste, vanilla and chocolate pastry cream, cream puffs on top, covered in caramel, whipped cream, and chocolate garnish.

Today we got our carrot cake out, cut it up, and took our marzipan carrots and iced, cut, and garnished all of these champs.

Spiced Carrot Cake with Cream Cheese frosting.
Sides covered in roasted coconut, and garnished with marzipan carrots.

Also made some pastry cream and prep for pie dough for the St.Honore cake being made tomorrow.

Today we made Orange Chiffon cake, and Angel Food Cake.

So since last weeks classes, I kept hearing the teacher say something like 'macka'.
I kept thinking to myself, wtf is a macka cake?!!!
So then I asked.. chef... wtf is that, do you mean MOCHA? Of course, it was what he meant.
But cuz of his awesome British accent, I can't get half the shit he says.

So, here is a 'macka' cake.
Masked in 'GBC' butter cream (stands for George Brown College..how gay is that... lulz)
We tossed in some espresso flavouring to make it taste like mocha.
Piped with rosettes on top, and decorated with chocolate shavings, and dark and white chocolate triangles, and garnished with roasted almonds around the sides.

Here is a variation to the cake, same ingredients, but we got to decorate this one a bit different.

This one has everything as the above, just espresso flavoured, marzipan hand molded coffee beans. And the stupid 'plaque' I can't fucking stand doing, titled "mocha".

Today we took the cakes from yesterday's class and decorated them.
It was a pain in the ass. The icing kept getting hard and we had to keep re0heating it to
make it more spreadable. Even then it was a bitch.
The glaze was even worse. That was hard. Everyone was having a tough time with it.....

So...

Devil's Food Cake layered, with pastry cream and bananas.
Glazed with chocolate glaze, and chocolate silk icing, with dried bananas, and dark and white chocolate decor, and white chocolate shavings.

Semester 2, week 2,class 6. A.K.A..epic fails...

Today, we made two different sponge cakes.
Black forest, and strawberry shortcake.

Today... I was also ..butterfingers...

After masking it, decorating it, I go to put the black forest cake (which was apparently filled with insanely expensive cherries) onto a paper plate to be boxed.. me being as rad as I am, lose my unbelievably good balance....! annnd I drop it onto the plate.
Its ok.. its a little slumped over but I decorate it anyways..

Before that, I had finished up my shortcake.

I go to my locker with both cakes (one for me, one for me to give to someone).
I go to take a picture of them, oh whats that?
My camera hates me and is dead.. sweet...
I try to fit both in my locker, black forest gets in fine, shortcake..kinda topples over. Awesome!

I gave the other cake, the black forest one away..
So, I give to you, one fucking abused cake....

With me taking it home, it had no chance in hell.....

So I missed today cuz of a doc's appointment.
So, I shall reminisce about an amazing salad I had in L.A last summer.
It was called SWS salad or some shit like that. Possibly, one of the best I have eaten, hand's down.

Chicken, salad leaves of some sort, tortillas, and some rad spicy buttermilk ranch type of sauce, black beans and corn. Mmmmm.

Mine, was a 'modified' pound cake. Doesn't is sound appetizing!!!?
It was a pretty slow day. Other than that, we masked fake cakes made out of styrofoam.

Semester 2, week 1, clasees 1, 2 and 3

I was going to do this when I started this class (for whatever reason I even started that, I don't know). But I gave up on that, and I don't remember half the shit we did, and in what order, or what to say about them. so I'll start with week one of semester 2.
Our chef is Chef Cheese. Hilarious, I know. We also made cheesecake the first day back.(wed)
Our teacher doesn't seem to know his way around quite yet, most likely new, but other than that, he is a pretty good teacher. We made the cheese cake.
Half the class got to do white chocolate, the other half, the one I was in, did amaretto.
We did those, and put them aside in the freezer.
On Friday, we finally got around to finishing the damn things. Cheese seems to be really into plating, which is good I suppose. So we plated a couple, the decorated and packaged the rest:

Amaretto cheesecake with chocolate, caramelized apples, and tuiles.

Backing up to Thursday, (we made the cheesecake Wed, and then packaged Fri) we made molton lava cake. It was supposed to be dark chocolate with a milk chocolate center, but we had no milk chocolate. So it was dark on dark. It was pretty rich and intense. Of course.. more plating, then packaging:

Dark chocolate molton lava cake, with cinnamon ice cream, raspberrie's, gooseberrie's, tuile, chocolate... chocolate..and more chocolate. Oh, and a bit of caramel.
