Semester 2, week 9, class 26

Finished up them cakes today. (Friday's class I mean)

Took that bitch out of the bowl... look at it O_O
Then we added the apricot glaze, which just makes it more brain-like. mmmm

Le braaaaaain! mwwuuuhahahhaha

So we move on to Sacher Cakes
Take the bars...
Cut them up...
Into barssss...
Write some ugly shit on them...
And some more ugly "S" on them.
I really wanna do more fucking cake decorating.. and not cookies and frigging cut up shit with ugly icing letters....

Semester 2, week 9, class 25

Today, we continued work on the cakes from yesterday.

Not many pics :(

I forgot I hadn't taken pics and by then the things were covered..

Charlotte Russe which we will finish tomorrow. (I hear it will look like a brain! )
We lined the bowl up with the cut up Charlotte Russe, and then put whipped cream and mandarins in it, then topped the top off with more cut up slices of the Charlotte.
We're gonna turn it upside down tomorrow I think, so its gonna look like a weird dome thing.

Sandwiched up the Sacher cakes, with some apricot jam in between, as well as on top.
Then, we cut em up!

Then did a crumb coat of ganache glazzzzeeee.

Finish em up tomorrow and then nomnommmm.

Semester 2, week 9, class 24

Prep for today and tomorrow.
Charlotte Russe Cake

Then, we rolled up the cooked sponge and put raspberry jam.

Semester 2, week 8, class 23

Today we finished up the Petit Four Sec cookies

The Sable covered in chocolate, with pistachio.

Linzer Cookies, with raspberry jam inside, covered with sugar and almonds
I think these were Sable as well, with Macaroon heart outlining, with raspberry jam inside.

These look funny, but were really good.
Marzipan between two pecans, dipped in chocolate.

The cookies in the front: Graham ginger cookies, dipped in white and dark chocolate, with pistachios on top.

Semester 2, week 8, class 22

Today we finished the opera cakes.
we took the big slabs...

Then put ugly writing on them...

We also made really big ugly ones..

They tasted all right, but I didnt really like the way they looked.

Semester 2, week 8, class 21

Today, was another prep day.
We are making Opera Cake, and Petit Four Sec, which is not quite the same as the Petit Four Glace, but similar concept.
An Opera Cake is a I think a 7 layer cake, consisting of an Almond sponge, chocolate coating, rum simple syrup, Ganache, Coffee Butter Cream, and Glaze.

It was a rush-rush day due to the fact that again, we got in 30 minutes late.... Thanks to the class in front of us. I don't quite blame them because I had that teacher last semester and my class always ran late as well.
