Semester 2, week 3, class 11

WARNING: Longggg ass post...

Lotta stuff prepped today for the St. Honore Cake.

Made some hand whipped cream, as well as vanilla and chocolate pastry cream to pipe into the cakes.

Only got one picture of the whipped cream, pastry cream pretty much looks the same anyways.

Then , we made the bases for the cake, which consisted of a pie dough base...

And then piped choux paste onto them, looks appetizing eh?

They're cooked, and look less gross...
So , cooked, and piped that bitch with some vanilla and chocolate pastry cream, which is fucking good if you get some thats made good. mmm mmm mm...

So then , we has also made come cream puffs, and piped some more good shit into them.
These blobs of dough (cream filled..oooh baby) were dipped in a sugar mix, boiled to create caramel. Fucking shit burned my finger, then cut me on my wrist. wtf.
See them sharp fucking edges.. thats some dangerous shit right thurr.

And dennnnnn...
We did some pulled sugar work to create this weird ass thing that looks like fucking hair on top, but its neat regardless. Poor feller alone in the box...Bad pic too.

Pie dough base, with a ring of choux paste, vanilla and chocolate pastry cream, cream puffs on top, covered in caramel, whipped cream, and chocolate garnish.

Semester 2, week 3, class 10

Today we got our carrot cake out, cut it up, and took our marzipan carrots and iced, cut, and garnished all of these champs.

Spiced Carrot Cake with Cream Cheese frosting.
Sides covered in roasted coconut, and garnished with marzipan carrots.

Also made some pastry cream and prep for pie dough for the St.Honore cake being made tomorrow.

Semester 2, week 3, class 9

Today we made Orange Chiffon cake, and Angel Food Cake.

Intense amount of eggs.

It looks a bit boring...but...
It was fucking delicious!

So, no pictures of the Angel Food Cake ....sorry, they got packaged and I was too into the Chiffon, cuz in all honesty, the Angel Food tasted like CRAP compared to this bad boy.

Semester 2, week 3, class 9

So since last weeks classes, I kept hearing the teacher say something like 'macka'.
I kept thinking to myself, wtf is a macka cake?!!!
So then I asked.. chef... wtf is that, do you mean MOCHA? Of course, it was what he meant.
But cuz of his awesome British accent, I can't get half the shit he says.

So, here is a 'macka' cake.
Masked in 'GBC' butter cream (stands for George Brown gay is that... lulz)
We tossed in some espresso flavouring to make it taste like mocha.
Piped with rosettes on top, and decorated with chocolate shavings, and dark and white chocolate triangles, and garnished with roasted almonds around the sides.

Here is a variation to the cake, same ingredients, but we got to decorate this one a bit different.

This one has everything as the above, just espresso flavoured, marzipan hand molded coffee beans. And the stupid 'plaque' I can't fucking stand doing, titled "mocha".

Semester 2, week 3, class 8

Today we took the cakes from yesterday's class and decorated them.
It was a pain in the ass. The icing kept getting hard and we had to keep re0heating it to
make it more spreadable. Even then it was a bitch.
The glaze was even worse. That was hard. Everyone was having a tough time with it.....


Devil's Food Cake layered, with pastry cream and bananas.
Glazed with chocolate glaze, and chocolate silk icing, with dried bananas, and dark and white chocolate decor, and white chocolate shavings.

Semester 2, week 2,class 6. A.K.A..epic fails...

Today, we made two different sponge cakes.
Black forest, and strawberry shortcake.

Today... I was also ..butterfingers...

After masking it, decorating it, I go to put the black forest cake (which was apparently filled with insanely expensive cherries) onto a paper plate to be boxed.. me being as rad as I am, lose my unbelievably good balance....! annnd I drop it onto the plate.
Its ok.. its a little slumped over but I decorate it anyways..

Before that, I had finished up my shortcake.

I go to my locker with both cakes (one for me, one for me to give to someone).
I go to take a picture of them, oh whats that?
My camera hates me and is dead.. sweet...
I try to fit both in my locker, black forest gets in fine, shortcake..kinda topples over. Awesome!

I gave the other cake, the black forest one away..
So, I give to you, one fucking abused cake....

With me taking it home, it had no chance in hell.....

Semester 2, week 2,class 5.

So I missed today cuz of a doc's appointment.
So, I shall reminisce about an amazing salad I had in L.A last summer.
It was called SWS salad or some shit like that. Possibly, one of the best I have eaten, hand's down.

also, whyy cant i undo this underline D:

Chicken, salad leaves of some sort, tortillas, and some rad spicy buttermilk ranch type of sauce, black beans and corn. Mmmmm.

Semester 2, week 2, class 4.

We made a variation of pound cakes. Groups got different kinds.
Mine, was a 'modified' pound cake. Doesn't is sound appetizing!!!?
It was a pretty slow day. Other than that, we masked fake cakes made out of styrofoam.

My groups flavour was MODIFIED. Mmmmmmmm....

Semester 2, week 1, clasees 1, 2 and 3

I was going to do this when I started this class (for whatever reason I even started that, I don't know). But I gave up on that, and I don't remember half the shit we did, and in what order, or what to say about them. so I'll start with week one of semester 2.
Our chef is Chef Cheese. Hilarious, I know. We also made cheesecake the first day back.(wed)
Our teacher doesn't seem to know his way around quite yet, most likely new, but other than that, he is a pretty good teacher. We made the cheese cake.
Half the class got to do white chocolate, the other half, the one I was in, did amaretto.
We did those, and put them aside in the freezer.
On Friday, we finally got around to finishing the damn things. Cheese seems to be really into plating, which is good I suppose. So we plated a couple, the decorated and packaged the rest:

Amaretto cheesecake with chocolate, caramelized apples, and tuiles.

Backing up to Thursday, (we made the cheesecake Wed, and then packaged Fri) we made molton lava cake. It was supposed to be dark chocolate with a milk chocolate center, but we had no milk chocolate. So it was dark on dark. It was pretty rich and intense. Of course.. more plating, then packaging:

Dark chocolate molton lava cake, with cinnamon ice cream, raspberrie's, gooseberrie's, tuile, chocolate... chocolate..and more chocolate. Oh, and a bit of caramel.
